South Park has a strip on Juniper that punches above its weight, and Bread & Bird is half the reason. The line on a Saturday is humbling. We've waited in it. We've also tried to skip the line and learned things about ourselves.

The bread
Toasted potato bun, butter on the inside. My cousin always wants brioche — says the potato is too soft to handle the chicken. He's outvoted in his own house. The potato bun is the right call. It gives a little, soaks the honey in the right places, and doesn't fight the bird.
The filling
Brined overnight. Double-dredged. The crust crackles. The hot honey isn't sweet honey with hot sauce poured on top — it's actually built differently and it has range. Garlic aioli underneath, dill pickles for the cut. Bone-in thigh, not breast, which is correct.
The people
Small kitchen. Long line. Husband-and-wife operation, somebody is always at the pass. They opened in 2024 and were in the conversation by month three. That's hard to do.
The verdict
Highest-ranked fried-chicken sandwich on the list, and my cousin would put it higher. He thinks technique alone gets you to a 9.5. I keep him grounded by reminding him about the parking. The parking is bad.
